Half dayMoroccan Cooking Class in Merzouga
Learn to cook a slow-simmered tagine and Moroccan salads with a local cook, then sit down to share the meal.

The Tafilalet oasis has its own food traditions, shaped by palm groves, desert trade routes and Amazigh home cooking. This tasting experience introduces you to them, one dish at a time.
The centrepiece is often medfouna — sometimes called ‘Berber pizza’ — a flatbread stuffed with spiced meat or vegetables, onions, eggs and herbs, baked in a clay oven or buried in hot sand. You’ll also taste several varieties of Tafilalet dates, which the region is famous for, along with seasonal salads, olives and fresh bread.
Depending on the day and venue, the tasting may include a small tagine, harira soup, lentils or kefta, finished with mint tea. Your guide or host explains how dishes are cooked at home, which are reserved for celebrations, and how ingredients travel from the oasis gardens and the Rissani souk to the table.
The experience takes place at a family-run guesthouse, a local eatery or, with their consent, a family home. Hosts are paid fairly, and access to private homes is never guaranteed. Vegetarian and other dietary requirements can usually be met on request.
Timings shift with the season (sunrise and sunset change by more than two hours across the year).
